We describe the physiology of bitter receptors, and the general physiological and humoral affects associated with the bitter flavor. We then discuss the nuances of the various categories of bitters such as bitter alternatives, tonic-astringents, mild bitters, aromatic bitters, bitter mints, bitter sedatives, bitter demulcents, bitter anodynes, and bitter laxative-tonics. Finally, we describe analogues, differentials, substitutions, combinations, formulas, and multi-system applications among the categories of bitter herbs.
